The Jesuit fathers initially settled the land to produce sweet church wine for their own use. During the post-WWI mandate period, due to increased demand from French troops, the operation evolved into the country's first modern commercial winery. The Jesuits managed it until 1973, when it was sold to a group of Lebanese investors.
Today, the winery is renowned for aging its wine in a 2-kilometer underground network of natural caves, originally excavated during the Roman era.
